Necessary Ingredients and Equipment
You will need to get the following equipment and ingredients for making your own pasta at home.
Dough whisk or fork
Pasta machine (optional)
400g flour (plain or Italian)
0.5 tsp salt
Now that we have everything we need, we can start making pasta.
First, you should place your flour on a work surface. In the center of the mound make a well. Crack the eggs into it and add the salt. With a fork, mildly whisk them. While doing it, secure the mound with your other hand. Do it, drawing in flour bit by bit, until your dough gets thick.
Now you have to knead you dough for about five minutes until it becomes elastic and smooth. You can check if it is ready by pressing it with your finger. The dough will spring back, if it has the desirable texture.
Shape it into a disc. Coat the dough with some flour. Then wrap it up in Saran Wrap. Now you have to let it rest for half an hour.
Unwrap your dough and divide it into four equal parts. Flatten them with a palm. If you have a pasta machine, use it according to the instructions. We will explain how to make pasta without it.
Flour lightly the rolling pin and roll out one of the four parts to a circle on the floured work surface. It should be about 1/7 inch thick. Repeat the process with the other three parts.
Now set aside the dough circles until they dry out a little. If they become too dry it will be difficult to handle them because they will break in your hands.

At this point, your pasta can be cooked, dried or frozen. If you want to cook it, boil water, salt it, and cook your pasta about four-five minutes. If you need to dry the pasta, hang the strips over a special rack or something else and let it rest for at least three hours. To freeze your pasta, put it into a container and place into a freezer, where you can keep it for up to 3 months.
