Making Sushi Rolls
Here is a simple step-by-step guide to making nori rolls.
Put a nori sheet on the rolling mat. It should be placed shiny side down. Moisten your hands with water. It will help you to handle the rice as it is very sticky.
Take half a cup of the previously prepared sushi rice and spread it over the sheet. Leave about one inch at the top of the nori.
Now you can arrange the fillings in a row across the rice. Leave some space above the fillings and below them. Then moisten the edge of nori, grasp the mat and start folding the sheet so that it overlaps the ingredients inside the sushi rice.
Roll the mat tightly and lift is slightly. Do it until the closest end touches the rice at the far end. Then the moistened edge of the sheet should be overlapped in order to make a seal.
By pressing the sides of the bamboo mat, square up your sushi roll.
Remove the roll from the mat and place it on a chopping board seam side down. Moisten the knife and cut the rolls into equal pieces. It is better to cut the nori roll in half and then cut the halves in thirds.
Now you can serve the sushi rolls. They are usually eaten with wasabi dissolved in soy sauce4. Serve slices of pickled ginger with you rolls. They are good for resetting taste buds.
